Three flavors combine for a decadent match made in vegan baking heaven. Sweet, citrusy and with a little zip from the ginger, these cupcakes are a moist and fluffy delight.
Here’s a simple dish I often make. It’ll take you about 30 minutes and tastes great! Totally vegan.
Recipe: Rice with mushrooms and tofu
Ingredients (4 people)
rice (basmati, but other species can also)
500g tofu (firm tofu)
2 medium onions
2 to 4 garlic cloves, depending on the size
This is a simple dish. To taste you can add sambal or chili.
Step 1: Cutting
Cut the garlic cloves into small pieces as small as possible, that bakes delicious.
Cut the onions and shred it. Place the onions and garlic in separate bowls or containers ready.
Wash the mushrooms and cut into thin slices.
Cut the tofu into small cubes (about 1x1cm)
Step 2: Rice
In order to make the rice I use a rice cooker. I make the rice in plenty of water, there will be a little damp from the grains. I always do a little garlic and onion in the rice cooker for a little extra flavor.
You can also rice “just” cooking in a pan.
Step 3: Mushrooms and Tofu
Take a large frying pan or wok. Put a little olive oil in the pan and turn the heat on. If the pan to working temperature, do a bit of garlic in the pan. Same great stir, then automatically starts the garlic a little color. If that happens it’s time to do the onions. Do not take all the onions, reserving a little for later.
Keep stirring in the pan, and add some salt and pepper to the onions. Keep them in mind, if color starts to come it is time for the tofu.
Tofu is the best when it is quite baked. That has equal time and attention. You can add a little soy sauce to the pan and stir to do with it. The tofu is then what brownish in color, bake tasty and get a delicious smell and taste. Preferably do not use too salty soy sauce, but a slightly sweet sauce is better.
If the tasty tofu begins to bake the mushrooms you can do it. Keep this whole mixture stirring well all the time, otherwise the tofu fry and that is sin. The mushrooms give over time their moisture, thereby the whole stew tasty moist, keep this moisture also stir well the rest.
On high heat, you have somewhere between 20 and 30 minutes to prepare this well.
The rest is simple. If your mixture is well cooked, and the rice is cooked, you can serve it on plates, or do in bowls and put on the table, just what you like. As stated earlier, a little sambal or chili is good, but that’s to everyone’s taste, so it might be the smartest turn. Sambal on the table You can also shred a chilli and fry the mushrooms and tofu.
My experience is that a glass of full bodied red wine was delicious in here, especially when the court makes a little hot with sambal or chili.
